Because seemingly tiny shifts in temperature affect plants' growing seasons and animals' mating and hibernation seasons and their ability to find food. Heat causes the oceans to move in toward the shore and rivers to dry up. If plants and animals die, if the coast is flooded with saltwater and the inland is a desert, humans can't have picnics on hot sunny days. We will die too.
